Freshwater fish production in Italy has been estimated at 32,000 tonnes/year (7% of total production in 2005). Also, in Italy studies on different lakes affected by cyanobacterial blooms have documented phenomena of accumulation of toxins produced in fish fauna. These natural events, through the emissaries, can even reach the sea coasts flanking the mouths. The most common cyanotoxins (microcystins, cylinderspermopsins, β-N-metilammino-L-alanina) require specific tissue research using immunological and instrumental methods; here are presented the main methods used, single or in combination, for the detection. Most cyanotoxin risk exposure scenarios do not take into account potential exposure through fish consumption. As a result, guidelines for toxin concentrations in fish tissues have not yet been established. Many studies show that the general limits proposed by the World Health Organization may not be adequate to protect against all possible levels of risk; methods of drawing up threshold limits for acute, chronic and carcinogenic risks are here reported.
