The bioaccumulation of cyanotoxins in plants takes on particular importance nowadays, given the great emphasis that is given to the consumption of vegetables in the daily diet: a vegetable-based diet is generally considered healthier, carrier benefits both for human health and for the planet in terms of lower environmental impact. The quality and possible contamination of these agricultural products are therefore a crucial aspect as in Italy alone there are a little less than 5 million vegetarians and vegans. In this context, the current scientific evidence at international and national level relating to the contamination of plant products by irrigation with water contaminated by cyanotoxins, and the methods of detection and purification are examined.
