The 5th edition of the National Congress on Mycotoxins in Food Chain will deal with three main issues related to the impact of these toxic compounds for animal and human health. The first issue regards the risk assessment that should lead to prioritization of the risks and possible associations with animal and human pathologies. This matter, mainly for the human side, is still deeply underestimated since no reliable information is available on the correlation between mycotoxin intake with diet and human diseases. The second issue regards the risk management of the mycotoxin threat along the whole agri-food chain. The individuation of the agronomic risks, although in some cases well defined, is still insufficient for implementing proper preventive actions mainly in the primary sector. The third issue, that is undoubtedly the most advanced, relates to the development of new diagnostic platforms aimed at a faster and faster and reliable analytical response to be used both in official control and in own-check activities. Since 2004 the National Congress has been held at the Istituto Superiore di Sanità (ISS, the National Institute of Health) with a two-year frequency, on average. This scientific event is an opportunity for researchers and stakeholders for discussing the effect of mycotoxins on economics, agriculture, industry, safety and legislation.
