Nitrogenous Compounds

Area of competence: nitrogenous compounds present as contaminants in food products. In particular, nitrates in food products included in Regulation (EC) 1881/2006 and subsequent amendments.

Regulatory framework:

  • Regulation (EC) 1881/2006 and subsequent amendments setting the maximum levels permitted in some food products for certain nitrogenous compounds present as contaminants in food (nitrates, melamine)
  • Regulation (EC) 1882/2006 laying down sampling and analysis methods for the official control of nitrate content in some food products to be subjected to control, the performance requirements of the analytical methods used in this activity and the rules for reporting results for conformity assessment
